Eggplant Fried Rice

What happens when you're cooking 2 different dishes and 'mess-up' 1 of them because its 11pm on a work-night, you're exhausted, and you're distracted by the towering stack of dishes already in your sink? 

Well 2 become 1 and you get this...


Last week I missed my What's Cooking Wednesday post, because I was pretty busy, and honestly making myself something nutritious to eat seemed more important then photographing it during the process! After a couple of not-so-nutritious take-out lunches, I finally got down to cooking mid-week...

The above dish is a combination of my Roasted Eggplant & Tomato w/ Basil & Parmesan (minus the cheese) and my Basil & Garlic Brown Rice (with ginger added!) I was making the 2 dishes at once, and the roasted eggplant just did not come out as beautiful as the last time I made it. The basil was  a little burnt, and I had put way too much oil on the too-thinly sliced eggplant. Taz suggested I just throw it all in the wok and stir-fry it up together, which would also help disperse the oil a little. I loved this one-dish Eggplant Fried Rice and ate it for lunch the next couple of days!

Anyone have any cooking mishaps that you've turned into a new dish success story?
